ALMOND BUTTER - SWEET POTATO BREAD


I stumbled upon this recipe some years ago and was immediately surprised at not only how simple it is, but how utterly nutritious it is as well! Kids and adults alike love this simple snack! You can modify it a little and add some bittersweet chocolate to make it seem like a brownie or chopped walnuts to give it a little crunch. 

To make, just follow the instructions below and prepare to be surprised.

What you’ll need:

1 1/2 cup creamy almond butter (drain oil)
2 cup mashed cooked sweet potatoes
1/4 cup blackstrap molasses
1/4 cup maple syrup
2 large organic eggs
1 teaspoon baking soda
1/2 teaspoon sea salt
1 tablespoon cinnamon
1 to 2 teaspoon ground ginger
1/4 teaspoon nutmeg

Preheat oven to 375, then cube and steam 1-2 purple yams / sweet potato, remove from heat and mash until you have 2 cups. Place mashed sweet potato in a bowl and combine all remaining ingredients. Coat 8x8 baking pan with a little coconut oil. Bake at 375 for 15-20 minutes or until middle is fully cooked. Let cool for 30min. Serve warm or cool. The trick with this recipe is to find the perfect moist point for you. I prefer mine a little squishy, to give it the best taste.
